I love to cook and I love to entertain but it wasn’t always that way. When I first met my husband, I had absolutely no clue (or desire) to attempt anything beyond a chili. In fact, that was the first meal I made Scott. However, his first meal for me was an incredible rosemary and Parmesan crusted rack of lamb served with melon and prosciutto as our appetizer. As we began to spend more time together, I began to teach myself to cook. My best friend at school had always told me, “If you can read, you can cook”. The failing in this statement was that I didn’t want to try to cook. Now I did. I downloaded all sorts of recipes and bought all types of books and then, I started to cook.

Since having our children, it was increasingly difficult to find time for us. Babysitters are expensive and coupled with a night out at your favorite restaurant you are looking at a pricey evening for some time together. Fridays at home became our date nights. I would cook meals from our favorite restaurants and replicate the dishes with my own spin. My passion for cooking recently turned into a cook book , ‘Simply Lovely’ by Nicola Kelly, and now I am enjoying creating recipes for this blog.

From me to you, I hope you enjoy the recipes I share with you. Some will be ideal for entertaining your family and friends, others are a lovely intimate way of saying I love you to the special person in your life.

They are, simply lovely.
